    2Q - Cooking Competition ~January 2013~
    Spicy Honey Chicken
    Rub:
    2 t Garlic Powder
    2 t Chili Powder
    1 t Salt
    1 t Ground Cumin
    1 t paprika
1/4-1/2 t Cayenne pepper (depending on how hot you like it)

    8 boneless skinless chicken thighs
    Glaze:
    6 T Honey
    2 t Cider Vinegar
Combine first 6 ingredients (all the spices) in bowl and mix well. Use kitchen shears (or a pair of clean scissors) to trim off any excess fat from the chicken pieces. Toss chicken with spice rub to coat all sides well. Brush grill surface lightly with oil. Grill chicken a few minutes on each side, until cooked through.
Combine honey and vinegar in a small bowl, stirring well until combined. Brush mixture on chicken (both sides) in the final moments of grilling. Now because the glaze is sugar-based, you’ll want to turn the heat down so it doesn’t burn, but let it cook for a few minutes to caramelize. You can also cook this under the broiler if you don’t have a BBQ or the weather is bad.

    Honey Dumplings

    Ingredients:

    2 cups lukewarm water
    1 cup lukewarm milk
    2 packages dry yeast
4 cups flour (or enough until a thick, pancake-like batter consistency is reached)
    1 tablespoon sugar
    1/2 teaspoon salt
2 tablespoons oil -oil (for frying) Garnish

1 cup honey (Greek thyme honey is best, and authentic)
    1/4 cup water
    cinnamon
    finely chopped walnuts (optional)
    sesame seed, toasted (optional)
    Directions:

    1
Dissolve the yeast in the lukewarm water.
    2
Put it along with the remaining dough ingredients into a mixing bowl and mix well until a smooth batter is obtained.
    3
Cover and let the batter rise in a warm place until it is approximately three times its previous bulk, (1-2 hours).
    4
Heat the oil for frying in a saucepan on the stove until very hot.
    5
Dip a teaspoon into oil to coat and spoon out some dough into the hot oil.
    6
Repeat until there are enough fritters to comfortably fill the surface area of the saucepan, without overcrowding.
    7
Dip the spoon in oil, every time the dough starts to stick on it.
    8
Fry loukoumades in very hot oil until golden brown, pushing them into the oil with a slotted spoon and transfer to a serving dish lined with kitchen paper for them to drain.
    9
Keep making more fritters in this way.
    10
When done, put them on a large platter and pour hot honey syrup over them and lightly dust with cinnamon.
    11
Sprinkle them with chopped walnuts and sesame seeds.
    12
    Serve immediately.
    13
    To make honey syrup.
    14
Heat honey and water in a small saucepan and skim off any froth that may form on top.
    15
Boil for 5 minutes together and pour over fritters.
    Yummyyyyyyyyyyyyyyyy my fav sweet dish

chicken honey mustard apples a?ea6e46 - Cooking Competition ~January 2013~

    INGREDIENTS
    1/2 cup apple cider
    1 1/2 teaspoons cornstarch
    Salt
    Freshly ground black pepper
    1 Tbsp honey
    2 Tbsp Dijon mustard
    1/2 cup flour, for dredging
1 pound boneless, skinless chicken breasts
    2 Tbsp olive oil
2 small unpeeled apples, cored and cut into eighths (use Fuji, Granny Smith, Jonathan,
Jonagold, Pippin, or McIntosh apples, good cooking apples)
    1/2 cup chicken broth
    Fresh parsley for garnish

    METHOD
1 Whisk cider, cornstarch, mustard, honey, salt and pepper (to taste) in a bowl. Set aside.

2 Salt the chicken well and dust in flour. Shake off the excess.

3 In a large non-stick skillet, heat the oil on medium to medium high heat.
Once the oil is hot add the chicken breasts to the pan. Cook until golden brown on one side,
about 3-4 minutes. Turn chicken, add apples, and cook until the chicken has browned on the other side.

4 Add chicken broth and cider mixture to the pan and bring to a boil. Turn the heat down to low,
cover the pot and simmer until chicken is tender, about 15 minutes.

5 With slotted spoon, remove chicken and apples to serving plates.
Spoon sauce over chicken and apples and sprinkle with parsley. Serve with rice or noodles.
