    Daal And Keema

    Daal And Keema : Is a typical Haryana curry that is prepared with minced meat and white dal ( urad dal) . This recipe can be prepared with other dals too like channa dal , green gram dal and green peas.
    Regional Dish: Delhi, Punjab, Haryana, Uttar Pradesh, Pakistan.
    Cuisine Style: Cooking Time 45mins | Take it Pulo/ naan| Type Curry| Shelf Life : 1 day| Quantity : 6 Servings.

    Appx. Nutritional values calculated for 1 serving:
    Calories (330Kcal), Carbohydrates (13g), Protein (22g), Fat (20g)

    Ingredients:
    • Urad dal split ( White Dal ) 1 cup soaked in water for 30 minutes.
    • Mutton Mince ½ kg
    • Onion 1 large sliced
    • Ginger garlic paste 1 tbsp.
    • Chili powder 1 ½ tsp. heaped
    • Salt 1 ½ tsp.
    • Oil ½ cup
    • Turmeric ½ tsp.
    • Green chilies chopped 4
    • Allspice 1 tsp.
    • Coriander leaves 2 tbsp.
    • Yogurt ½ cup
    Method:
    1. Heat oil add onion, fry till light golden, add ginger garlic paste with mince, fry for 5 minutes.
    2. Add turmeric, chili powder, salt and yogurt, fry well, cover and cook till mince nearly done.
    3. Add soaked daal, toss well, add 1 cup water, cover and cook till daal is tender.
    4. Lastly add green chilies, coriander leaves, and allspice and put on dum( steam) for 10 minutes.

    Variations:
    Use Channa Dal, green gram dal, peas, whole green gram, rajma, chick peas , black eye beans, fresh corn.

    Ingredients:

    Mash Ki DAAL : Adha Kilo
    piyaz : 2 adad
    timatar : 4 adad normal size k
    sabut zeera : half tea spoon
    Hari mirch : 4 adad
    lal mirch : 2 tea spoon
    haldi : half tea spoon
    namk : hasb e zaiqa
    lehsan adrak ka peste 1 tea spoon
    oil : 3 salan waley chamch
    pani : 1 n half glass

    Method :

    Dal Makhani

    Ingredients

    3/4 cup whole urad (whole black lentil)
    2 tbsp rajma (kidney beans)
    salt to taste
    3 tbsp butter
    1 tsp cumin seeds (jeera)
    2 green chillies , cut lengthwise
    25 mm (1") piece cinnamon (dalchini)
    2 cloves (laung / lavang)
    3 cardamoms
    1/2 cup finely chopped onions
    1/2 tsp ginger-garlic (adrak-lehsun) paste
    1 tsp chilli powder
    1/4 tsp turmeric powder (haldi)
    1 1/2 cups fresh tomato puree
    1/2 cup fresh cream
    2 tbsp chopped coriander (dhania)
    1 tbsp fresh cream for the garnish



    Method
    • Clean, wash and soak the whole urad and rajma overnight.
    • Drain, add 2 cups of water and salt and pressure cook for 7 whistles or till the dals are overcooked.
    • Allow the steam to escape before opening the lid.
    • Whisk till the dal is almost mashed. Keep aside.
    • For the tempering, heat the butter in a deep pan and add the cumin seeds.
    • When the cumin seeds crackle, add the green chillies, cinnamon, cloves, cardamoms, and onions and sauté till the onions turn golden brown in colour.
    • Add the ginger-garlic paste,chilli powder, turmeric powder and tomato puree and cook over a medium flame till the mixture leaves oil.
    • Add the dal, salt and approx 2 to 3 tbsp water if required and simmer for 10 to 15 minutes.
    • Add the cream and mix well. Simmer for 2 to 3 more minutes.
    • Serve hot garnished with coriander and fresh cream.

    Fried Maash Ki Daal
    Ingredient:

    1 cup maash daal soaked overnight
    1 medium onion chopped
    1 medium tomato chopped
    1/2 tsp cumin seeds
    4 black peppercorn
    3 cloves
    4 whole red chilli or 1/2 tsp of red chilli powder or both if you can take the heat :P
    2 garlic clove chopped
    1/4 cup butter melted
    2 chopped green chillies
    handful of chopped coriander for garnish
    1/2 inch of ginger thinly sliced

    Wash lentil and boil with salt till soft. Be careful not to leave it for too long or it will get really soft and break.

    In a pan add 2 tbsp oil, onion, cumin seeds, black peppercorn and clove. Fry till onion is translucent.

    Add the garlic and fry till fragnant. Throw in the tomato, salt and red chilli, cover and cook till its water completely dries.

    Add the boiled lentil with 1/4 cup water. Cover and cook on low flame till ready. Add in the melted butter, stir and garnish with coriander and ginger.

    Kharay Masalay Wali Mash Ki Daal

    Recipe Ingredients

    1 cup White lentil
    3 Onion chopped
    3 Black cardamom
    3 Cloves
    4 Green chilies sliced
    6 Whole red chilies
    6 Whole black pepper
    1 piece Cinnamon
    1/2 bunch Mint leaves chopped
    1/2 bunch Oil
    1/2 cup Fresh milk
    1 tsp Turmeric
    1 tbsp Ginger garlic paste
    1 tbsp Dry ginger powder
    2 tbsp Butter
    2 tbsp Ginger chopped
    to taste Salt

    Recipe Method
    Wash 1 cup white lentils with lukewarm water and soak for few minutes.Heat
    ½ cup oil and 2 tbsp butter in a clay pot. Add in 3 chopped onion and fry till
    golden brown. Remove half of the brown onion and keep aside.Now add in pan 1
    tbsp ginger garlic paste, 1 tsp turmeric, 1 tsp turmeric, 6 whole black pepper,
    3 cloves, 1 piece of cinnamon, 3 green cardamom and 6 whole red chilies. Slightly
    fry and add soaked lentils.Now add 1 tbsp dry ginger powder and fry well. Also
    add 1 or 2 cups of warm water with salt to taste. Cover and cook till water
    dries.Add 1 tbsp chopped ginger, few mint leaves, 2 sliced green chilies and ½
    cup milk. Simmer till lentils are tender.Lastly add 1 tbsp sliced ginger,
    remaining mint leaves, remaining brown onion and 2 sliced green chilies.

    Serve
    with chapatti

    Chicken Daal Kebab Rida Aftab Recipe - ~Cooking Competition April 2013~

    INGREDIENTS :


    • ½ kg boneless chicken
    • 1 cup boiled gram lentils
    • ½ bunch of mint leaves
    • 6 green chilies
    • 1 boiled potato
    • 2 eggs
    • 1 tsp hot spices powder
    • 1 tsp salt
    • 1 tbsp ginger garlic paste
    • 1 tbsp finely sliced ginger
    • ½ tsp nutmeg
    • 2 tsp cumin seeds
    • 2 tsp coriander seeds
    • 2 tsp fennel seeds
    • 2 tbsp crushed red chilies
    • Oil for frying


    How to make Chicken Daal Kebab

    Chop ½ kg boneless chicken into small pieces. In a cooking pot, add chicken with a glass of water, 2 tsp cumin seeds, 2 tsp coriander seeds, 2 tbsp crushed red chilies, 1 tsp salt, 2 tsp fennel seeds, 1 tbsp ginger garlic paste, ½ tsp nutmeg and 1 tsp hot spices powder and allow cooking on low flame for 20 minutes. Increase the flame to evaporate excess water and turn off the flame. In a chopper, chop together chicken and a boiled potato. Then mix with 2 beaten eggs, ½ bunch mint, 6 green chilies, 2 onions and 1 tbsp sliced ginger. Form the mixture into shape of kebabs and fry in oil as required. Delicious Chicken Daal Kebab is ready to serve.
