    Ingredients:

    1 kg Potatoes
    1cup Tomato puree
    1 tbsp Ginger garlic paste
    1 tbsp Ginger finely chopped
    1 tbsp Cumin
    1 tbsp Red chili crushed
    1/2 tbsp Jaggery
    as required Salt
    20 Almonds finely chopped
    1/2cup Fresh Cream
    4 Lemon
    1tsp Whole coriander
    1tsp Whole black pepper
    4 Green chilies crushed
    as required Oil



    Method:
    Wash and boil the potatoes for 10 minutes. Peel the potatoes .Heat oil in a wok and deep fry the potatoes till they turn golden brown. Turn the flame off allow the oil to cool down and pour back into the container.

    In the same wok on a medium flame add the tomato puree, red chili, cumin, jaggery .Fry for 2-3 minutes then add in the fried potatoes. Grind together the whole coriander and whole black pepper. Add this mixture, green chilies and lemon juice to the wok .Fry for 3-4 minutes until the oil floats on top.

    Before serving mix in the cream and garnish with almonds.

    POTATO BASKET WD Chaat
    Ingredients For Basket:
    Potato...........4 large size
    Salt............as required
    Corn Flour...........2 tbsp
    Oil............for frying

    Method:
    1.Cut the potato in small slices just like french fries but
    in thin slices.
    2.Add some salt n corn flour in it.
    3.Take a Big pan n heat the oil.
    4.Take a basket n place all potato slices in it n spread it
    in the center n some at the sides.
    5.Place one more basket on it n press it.
    6.Fry that in the pan just like this.

    n place in a platter.

    Ingredients for Filling:
    Whole Green Grams.............1 cup boiled
    Moth Brown............1 cup boiled
    Black pepper............to taste

    Green chilli........1 tsp chopped
    Coriander fresh............1 tbsp
    Chaat masala.........to taste
    Turmind....... as reqired
    Mint.......as required
    Salt.......as required
    Potato.......1 boiled
    Tomato........1

    Method:
    1.Cut the potato n tomato in slices.
    2.Add all the grams n moth browns n all
    spices in it.
    3.Mix all the ingredients n put it in the potato basket

    Recipe Ingredients


    • Mix Vegetables ½ kg
    • Tomatoes (chopped) 2
    • Potatoes (cubed) 1 cup
    • Onion (chopped) 1
    • Ginger Garlic Paste 2 tbsp
    • Red beans (boiled) 1 cup
    • Cream ¼ cup
    • Red chili powder 1 tbsp
    • Cumin seed powder 1 tsp
    • Coriander seed powder 1 tsp
    • Curry leaves 2-3
    • Oil 2 tbsp
    • Salt to taste



    Recipe Method



    1. Take some oil in the pan and sauté ginger garlic paste and 1 chopped onion for 3-4 minutes. Add in 2 chopped tomatoes and 1 tbsp red chili powder, salt, 1 tsp cumin seed powder and 1 tsp coriander seed powder.
    2. When the tomatoes are cooked then add in ½ kg mix vegetables and 1 cup boiled red beans.
    3. Add in 1 cup water and let the vegetables cook. When the water dries and the vegetables are completely cooked then add in cream. Sauté some curry leaves in oil and add it on the mixed vegetables. Dish it out and serve.

    Mughlai Vegetable Biryani

    Ingredients

    ½ cup fresh beans, chopped
    ½ cup green peas
    1 cup carrot, chopped into small cubes
    1 cup cauliflower cut into small florets (about 12 small florets)

    rice
    Ingredients

    2 cups long grain basmati rice

    masala
    Ingredients

    1 tablespoon cashewnuts
    ½ tablespoon khus khus (white poppy seeds)
    1 tablespoon fresh grated coconut
    1/3 cup vegetable oil
    2 small onions grated (about ½ cup when grated)
    ½ bay leaf
    1 thin piece of cinnamon
    4 cloves
    2 cardamom pods
    1 teaspoon ginger paste
    1 teaspoon garlic paste
    2 medium tomatoes, pureed in a blender
    ½ cup full fat yogurt
    1 teaspoon garam masala
    2 teaspoons chili powder
    ¼ teaspoon cumin powder

    Method
    1. Grind the cashew, khus khus and coconut into a smooth paste, using as little water as possible. Set aside.

    2. Heat oil in a large skillet. Add grated onions, and cook on low heat till the onions are brown, about 10 minutes.

    3. To the onions, add the bay leaf, cinnamon, cloves, and cardamom. Crank up the heat to medium and stir for about 1 minute or till fragrant.
    4. Add the ginger and garlic pastes. Stir and let it cook for about 30 seconds.

    5. Add the coconut, khus khus, cashew paste. Stir another 30 seconds.

    6. Add pureed tomatoes and cook for about 4 minutes. Remove the skillet from the heat.

    7. Add yogurt and mix well. Moving the skillet away from the heat when adding yogurt will prevent it from curdling.

    8. Return the skillet to the stove. Turn heat to low, and add garam masala, chili powder, and cumin powder. Stir for 1 minute.

    9. Now add the reserved vegetables and salt. Cook for 10 minutes or till the vegetables are almost done. Add ½ cup water, and simmer another 3-5 minutes.

    10. Taste the gravy and adjust salt if needed. Remember: this gravy will be spicy, but when you add the rice to it later, everything will balance out.

    11. Now you are ready to layer the biryani. Take a large baking dish. Lightly oil the inside.
    12. Layer everything in this order – half the rice, half the chopped cilantro, half the chopped mint, all the vegetables and gravy, remaining half of the rice, saffron dissolved in milk, remaining half the cilantro and mint. Drizzle the top with ghee.

    13. Cover the baking dish and bake in a 350f oven for 15 minutes or till the rice is cooked through but not muchy. Turn the oven off, and let the biryani sit in the hot oven another 10 minutes.

    بھنڈیوں کو صاف کرکے درمیان سے کٹ لگائیں۔ ایک پیالی میں دھنیاپائوڈر‘ ہلدی‘ امچور‘ گرم مصالحہ ، سرخ مرچ اور نمک ملائیں۔ اس مسالہ کو بھنڈیوں میں احتیاط کے ساتھ چمچ سے بھردیں۔ گھی گرم کرکے زیرہ ڈالیں۔ ایک منٹ بعد بھنڈیاں احتیاط سے ڈالیں۔ چمچے سے ہلائیں جب بھنڈیاں گل جائیں تو چولہے سے اتار لیں اور گرم گرم سرو کریں۔
