Perfect for Winters
4 cups prepared chicken stock OR you can use water and add in a stock cube
1 medium onion, chopped
1 medium carrot, chopped
1/2 cup peas
3 tbsp tomato paste
1/4 tsp dried oregano
1/2 tsp dried basil
2 cups small sized pasta, uncooked
cooked chicken, cubed, optional
1 1/2 tsp salt or as required
2-3 tbsp oil
In a large pan, heat the oil on medium heat and lightly saute the onions.
Add in the chopped carrots. Now add the tomato paste and spices. Stir fry for about a minute.
Add in the chicken stock (or water) and stir or whisk to dissolve the tomato paste. Now add in the pasta.
Leave to simmer on low heat, till the soup has thickened a little bit and the pasta is cooked through.
Add in the peas and cooked chicken if using.
Adjust seasonings to your taste.
Serve in a bowl with garlic toast or breadsticks.
