Coconut Fish Curry
1 kg white fish fillets, cubed
1 medium onione, chopped
1 tbsp ginger/garlic paste
1 tsp turmeric powder
1 1/4 tsp salt
1 tsp red chili powder
1/2 tsp cumin powder
1 tbsp lemon juice
4-5 tbsp tomato paste ( I used a box of Saudi brand)
1 large can of coconut milk (not powder)
4-5 tbsp oil
Ginger, julliened, for garnishing
In a bowl, add the fish cubes and mix in the turmeric powder and lemon juice. Set aside for about 10 minutes.
After 10 minutes, lightly fry the pieces in a few tbsp of oil, just until the pieces are very lightly golden. Set aside.
In a pan, heat the oil on medium high. Add in the chopped onions and saute till light pink. Add in the ginger/garlic paste.
Add in the tomato paste and spices. Saute a little. Now add in the coconut milk and mix well. Taste and adjust seasonings as required.
Now add in the fish with any fluid that may have collected. Simmer on low heat for about 7-8 minutes.
Serve garnished with julienne ginger, coriander and chopped green chilies.
