    Spinach, mushroom and lemon pilaf
    31spinach pilaf - Spinach, mushroom and lemon pilaf

    INGREDIENTS:
    *200 g spinach, washed and roughly chopped
    * lemon, zested and juiced
    *2 garlic flakes
    * 50 g butter
    *250 g basmati rice
    * 150 g chestnut (or button) mushrooms, sliced
    * 2 onions, finely sliced
    * 450 ml vegetable stock (fresh or made from a cube)
    * 1 cinnamon stick, 4 cloves, 4 cardamom pods, bruised




    METHOD:
    Melt the butter in a large shallow pan and cook the onion and garlic until soft and golden. Add the mushrooms and cook until softened. Add the cinnamon, cloves and cardamom and cook for two minutes, then stir in the rice, lemon zest and stock. Cover. Cook on a gentle heat for about 15 minutes until the liquid has been absorbed. Stir the spinach and lemon juice through, cover for two minutes until wilted and serve.
    TIP: To wilt spinach quickly, put in a colander and pour a kettle
    of boiling water over
