    Fried Rice

    Serves 3 to 5



    Ingredients:



    4 cups cold cooked rice
    2 large eggs
    1 teaspoon salt
    1/2 teaspoon pepper
    4 tablespoons canola, corn, or peanut oil
    1/2 cup thinly sliced scallions or diced onion
    1 teaspoon thick soy sauce*
    1 cup fresh peas, parboiled, or thawed frozen peas
    1 cup diced carrots, parboiled or thawed frozen carrots
    1/2 cup diced cooked ham, chicken, turkey or pork
    1 cup fresh bean sprouts



    Directions:



    Place the rice in a large bowl and use your fingers to break up any lumps. Set aside. Beat the eggs in a separate bowl with the salt and pepper. Set aside.


    Pour the oil into a wok or stir-fry pan and place the pan over medium-high heat. When the oil is hot but not smoking, add the scallions; they should sizzle. Stir for about 15 seconds. Stir the beaten eggs into the pan with a spatula and scramble until the eggs are dry and separate.


    Add the rice to the eggs and mix thoroughly. Pour the soy sauce evenly over the mixture. Add the peas, carrots, ham, and bean sprouts. Stir constantly until all the ingredients are well mixed and heated through. Serve the fried rice immediately.

    *Available in Asian markets. You can substitute dark soy sauce, but you will need to add more than 1 teaspoon to get the same dark color.


    Fried Rice Nutritional Breakdown per serving (based on 5 servings, and substituting soy sauce for the thick soy sauce): 384 calories (kcal); 15 g Total Fat (23 percent calories from fat); 11 g Protein; 51 g Carbohydrate; 82 mg Cholesterol; 711 mg Sodium; 4g Fiber. At three servings the calorie count per serving climbs to 640, with 38 percent calories from fat, and the sodium count jumps to 1185 mg.

    Chicken Shashlick

    Ingredients

    1 pint of live natural yogurt
    1 Tablespoon Cumin powder
    1 Tablespoon garam massala
    1 Teaspoon Coriander powder
    3 Teaspoon Turmeric powder
    1 Teaspoon chilli powder
    Juice 1 lemon
    8 cloves garlic - crushed
    1 inch grated ginger
    4 Chicken Breasts Cubed
    1 large Onion chopped into kebab sized chunks
    2 green peppers chopped into kebab sized chunks
    1 Lemon

    Method
    Mix the spices, lemon juice, ginger and garlic up into a paste with a little water and stir in well with the yogurt to make a marinade. Marinate the chicken in the marinade for 2-60 hours. Preheat the oven to it's highest heat for at least 20 minutes. Shake off excess marinade and place chicken pieces on skewers with an alternate piece of onion or pepper between each piece of chicjen, place on a wire rack in the oven. Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest piece with a skewer, if the juices run clear it's cooked, serve with a wedge of lemon.

    Chinese Chilli Beef

    Ingredients:


    Beef - 250 gm (thinly sliced)
    Garlic pods - 5 nos
    Green chillies - 4 nos
    Soya sauce - 2 tbsp
    White pepper powder - 1 tsp
    Black pepper powder - 1 tsp
    Sugar - 1 tsp
    Chicken stock cube - 1 no
    Spring onions(chopped) - 2 tbsp
    Cornflour
    Egg - 1 no
    Method:
    1)Mix together 1 tbsp of soya sauce, 1/2 tsp each of black and white pepper powder, 1 egg and enough cornflour to make a good coating.

    2)Marinate the beef with the above mixture for about 10 mins.

    3)Deep fry beef in hot oil, until golden brown.

    4)Remove and drain the oil.

    :- Be careful not to burn the beef.

    5)Make a paste of garlic and chillies by chopping them and grinding in a mixer grinder.

    6)Heat 1 tbsp of oil in a pan.

    7)Fry the chilly-garlic paste for around 30 secs on medium heat.

    :- Do not burn.

    8)Dissolve the chicken stock cube in one cup of boiling water and add it to the pan.

    9)Add the remaining 1/2 tbsp of white pepper, 1/2 tbsp of black pepper, 1 tbsp of soya sauce and 1 tsp of sugar.

    10)Bring it to a boil.

    11)Add the fried beef pieces.

    12)Allow it to cook for a few more mins, until the gravy thickens.

    13)Add the chopped spring onions and stir for 10 secs and remove from heat.

    Rub chicken legs evenly with Chinese prickly ash and salt, and put them in a bowl for about two hours. Put chicken legs in a small basin and add in soy sauce, clove, Chinese star anise, scallion sections, ginger slices and stock. Steam in a steamer till tender. Take out chicken legs and drain out.

    When oil is 80 percent hot, put in chicken legs and deep-fry till golden yellow and take them out. The eaters may chop chicken legs into strips and dip them in salty Chinese prickly ash when eating.

    Hot and Sour Soup





    Ingredients:


    • 2 tbsp. vegetable oil
    • 1 med. onion, sliced
    • 3 carrots, thinly sliced
    • 3 cloves minced garlic
    • 1 tbsp. fresh ginger, minced
    • 4 c. chicken broth
    • 1 c. water
    • 2 tbsp. soy sauce
    • 6 oz. shiitake mushrooms
    • 1/3 c. sliced water chestnuts
    • 1/2 lb. sliced snow peas
    • 1 c. fresh bean sprouts
    • 1/4 c. rice-wine vinegar
    • 2 tbsp. sesame oil
    • Dash of chili oil





    Directions:
    1. Heat 2 tbsp. vegetable oil in a heavy pot over medium heat.
    2. Add the onion and carrots; cook, stirring constantly for 3 minutes.
    3. Add the garlic and ginger; cook, stirring for 1 minute.
    4. Add chicken broth, water and soy sauce. Bring to a boil and cook for 2 minutes.
    5. Add the mushrooms and water chestnuts; boil for 1 minute.
    6. Turn off heat, add peas and bean sprouts. Cover and let rest for 2 minutes.
    7. Stir in rice-wine vinegar, sesame oil and chili oil. Heat through for 1 minute, serve immediately.

    INGREDIENTS
    • 2 tablespoons sesame oil
    • 1/2 teaspoon ground turmeric
    • 2 teaspoons chopped fresh ginger root
    • 2 tablespoons chile paste
    • 1 pound chopped cooked chicken breast
    • 1 quart chicken broth
    • 2 teaspoons sugar
    • 1/4 cup soy sauce
    • 1 cup chopped celery
    • 1 (3 ounce) package ramen noodles
    • 1 cup shredded lettuce
    • 1/2 cup chopped green onion table.
    DIRECTIONS

    1. In a large pot, heat oil over medium heat. Cook turmeric, ginger and chile paste in oil until fragrant, 1 to 2 minutes. Stir in chicken, broth, sugar, soy sauce and celery. Bring to a boil, then introduce noodles and cook 3 minutes. Stir in lettuce and remove from heat. Serve garnished with green onions.
