    Aloo pakora chaat

    Ingredients


    • Besan (gram flour/chickpea flour) - 1 cup
    • Potato - 2 medium size (sliced thin)
    • Chopped Onion - 1 cup thinly chopped
    • Chopped Tomato - 1/4 cup
    • Cilantro - 1 tablespoon
    • Green chillies - 1 finely chopped (optional)
    • Red chilly powder - 1/2 teaspoon (according to spice level)
    • Lemon juice - 1 tablespoon
    • Chaat masala - 1/2 teaspoon
    • Salt to taste - 1/2 teaspoon

    Process

    Preparing the batter to dip potato slices:
    • Besan (gram flour) - 1 cup
    • Red chilly power - 1/2 teaspoon.
    • Salt according to taste - approximately - 1/2 teaspoon.
    • Water little less than 1/2 cup approximately.
    • Mix them in a wide bowl, vegetables are easy to dip.
    • Prepare medium thick batter consistency slowly adding water to it.

    Deep-frying:


    Take 3 cups of oil in a deep bottomed skillet. Heat the oil on medium-high. Dip the potato slice one at a time in the batter so that potato slices are well coated with the batter.

    Gently drop them in the skillet and deep fry until golden.

    Remove them on to a paper towel covered plate to soak the excess oil and let it cool a minute or two.

    Take the chopped onions, tomatoes, cilantro, green chillies (optional) to the cut bite size pakoras and mix all of them in a bowl.

    Noodle Pakoras


    Ingredients

    Noodles 2 packets (spicy)
    Green chilies 3 (chopped)
    Cottage cheese 100g (cut into smaller cubes)
    Gram flour 100g
    Salt to taste
    Water 1 cup
    Oil 2 cups (for deep frying)
    Recipe

    Boil noodles in 3 cups of boiling water for 2 min. also add tastemaker. Keep aside. When cools down, mix with green chilly and cheese cubes.’
    Mix gram flour, salt and water for a smooth thick batter.
    Add boiled noodles and mix well.
    Heat oil in a wok; shape the mixture into small pakoras and deep fry until golden brown.

    Black Fruit Salad


    Description


    Black fruit salad is prepared with black cherries, black grapes, and blueberries. Enjoy making this nutritious black fruit salad recipe that is all tangy and sweety .
    Ingredients

    1 c. dark cherries, pitted & halved
    1 c. blueberries
    1 c. sour cream
    1/3 c. light brown sugar
    1 c. black grapes, remove seeds
    Juice of 1 lemon
    Mint sprigs
    Recipe

    Mix fruits. Dust with brown sugar and lemon juice. Let settle for almost two hours tossing quite a lot of times. Pick up fruit with slotted spoon. Break up into 4 balloon wine glasses. Cook while stirring sour cream into mixed juices in bowl. Put spoonful of sour cream on fruit and decorate with mint sprigs.

    Green Chili Fries


    Ingredients

    6 potato, baking
    1 cup green chili sauce
    1 cup cheddar cheese, grated
    Recipe

    Peel and cut potatoes into french fry sticks.
    Either fry potatoes in oil or bake in a 400 oven for 15 to 20 minutes.
    Heat green chili in a saucepan.
    When potatoes are done place on a broil proof pan, I use a metal pie pan, pour green chilie on top then sprinkle with cheese.
    Place back into a broiler for 5 minutes to melt cheese.
    Optional toppings: sour cream, onions, jalapenoes, or guacamole.

    Seven minute aloo sabzi

    Recipe:

    4 medium size aloo
    A few sprigs of dill finely chopped
    1/2 tsp of rye or rai
    1/2 tsp jeera
    Red chilli powder per taste
    1 tsp Dhania powder
    1/4 tsp of amchur powder or lime/lemon juice
    Salt per taste
    A couple of kari leaves
    1 – 2 tsp oil
    Prick the aloo randomly and microwave on high for about 4 minutes or until tender. Take it out and put it in cold water for easy peeling. Meanwhile, heat oil in a non-stick pan (preferable) and add the rye and jeera, then add the kari leaves, keep the heat on low now. Peel the skin of the aloo and dice it into big chunks. This takes about 1 & 1/2 min. Increase the heat on the stove and add the spices mentioned into the oil, mix well then put the aloo, mix gently. Garnish with dill. Adjust seasonings if needed.

    Potato Chicken Balls

    Ingredients:

    4 boiled potatoes (mashed)
    1/2 kg chicken boiled and shredded
    1/2 cup of tamarind water
    1 tsp of salt
    1/2 tsp black pepper
    Bread crumbs for coating
    Oil for frying


    Method:
    • Add 1/2 tsp salt and pepper, 1/2 cup tamarind water and chicken to the mashed potatoes.
    • Mix well and make small balls of this mixture.
    • Coat it in bread crumbs.
    • Heat the oil and fry them until golden brown.
    • Potato chicken balls are ready.
    • Serve hot with ketchup.

    Ingredients

    4 peaches
    4 guava, umrood
    3 bananas
    4 tablespoons sugar
    2 tablespoons lemon juice
    1 tablespoon chat masala
    1/2 teaspoon salt


    Directions
    1. Skin the peaches, then cut them into half and remove the stones. Slice the peaches thinly and place them into a salad bowl.
    2. Peel the bananas and cut them into thick slices. Add to the peaches.
    3. Cut guavas into half, scoop out seeds and discard them. Peel and slice the guavas and add to the peaches and bananas in the bowl.
    4. Mix together lemon juice, sugar, salt, and chaat masala, add to the fruits and mix carefully. Refrigerate for two hours.
