    Ingredients :

    500g beef rib-eye or lean flank steak
    125ml Hot Basil and Chilli Sauce (see below)
    20g Crispy Fried Basil Leaves
    (see note) to serve

    Marinade

    2 tablespoons soy sauce
    1 tablespoon fish sauce
    1 teaspoon sugar
    1 teaspoon freshly ground black pepper

    Hot Basil and Chilli Sauce
    1 tablespoon oil
    3 cloves garlic, minced
    2 red chillies, sliced
    1 tablespoon sugar
    1 tablespoon oyster sauce
    1 tablespoon fish sauce
    1 tablespoon soy sauce
    1 teaspoon white pepper
    10 basil leaves

    Method :

    First make the Marinade by combining the soy sauce,
    fish sauce, sugar and black pepper in a bowl.
    Mix well until the sugar is dissolved.
    Pour the Marinade over the beef and marinate
    for about 1 hour.
    Grill the beef on a charcoal or pan grill until browned
    on the outside but still ink and moist on the inside.
    This should take 5 to 10 minutes. Set aside to cool.
    Cut the beef into thin slices and place on a serving platter.
    Pour the Hot Basil and Chilli Sauce over and serve with
    Crispy Fried Basil Leaves

    Note : To make the Crispy Fried Basil Leaves,
    stir-fry 8 to 10 thinly sliced or whole basil leaves
    in several tablespoons of hot oil over medium heat
    for 1 to 2 minutes, stirring constantly,
    until crispy and fragrant.
    Remove with a slotted spoon and
    the excess oil on paper towels
