    Aalo bhaja


    Ingredients




    • 4 large-sized Potatoes (cut into very thin strips)


    • 3 finely chopped Green Chillies (optional)


    • 1 tsp Black Cumin Seeds


    • 1/2 tsp Turmeric Powder


    • 1 Dry Red Chilli


    • 4 tbsp Oil


    • Salt to taste



    How to make Aloo Bhaja:

    Heat oil in a flat pan and add red chilli after breaking it in two pieces. When the chilly turns blackish red; add the cumin seeds and allow it to splutter. Now add turmeric powder, green chillies and potato strips. Fry till the potatoes on high flame for 20 seconds and then on low flame till tender. Add salt to taste and stir properly for 1 minute; put off the flame. Serve hot with freshly prepared rice and dal.

    meri try ki hui recipe hai bht achi banty hai ap b try karain aur enjoy karain

    1/2 kilo aloo
    2 bareek kati hari mirch
    1 tsp chop garlic
    1 tsp kuti lal mirch
    1 tsp khatahi powder
    1/4 tsp haldi
    namak hasb e zahiqa
    1 tsp pisa zeera
    zarday ka rang thora sa
    2 tbs hara daniya
    1 tsp chat masala
    1/4 tsp ajino moto



    RECIPE



    aloo ko cheel kar chotay tukray kar lain,pani may aloo zarday ka rang mila kar ubal lain ab pani say nikal lain,2 tbs oil garam kar k chop garlic ko thora fry karain ab isay stove say hata kar is may haldi,namak,kuti lal mirch,ajino moto,pisa zeera,khatahi powder mix kar k zara dair pakahin thora sa pani mila kar ta k masala jal na jahay,ab is may aloo shamil kar dain sath chat masala,hari mirch,hara daniya mila kar 2 mint paka lain,garam garam serve karain

    ALU KE PARATHE

    aloo paratha - CooKing Compitition Oct 09


    Ingredients:-


    Boiled potatoes, wheat flour, red chilly powder, , salt to taste, finely chopped coriander leaves, chopped green chilly, oil.

    Procedure: -


    Peel the boiled potatoes, and crush them. Add red chilly powder, a little bit of aniseed, finely chopped green chilly, chopped coriander leaves, salt to taste and mix them well. Heat oil in a pan and saut the potato mixture for some while.

    Now take wheat flour, add a pinch of salt and prepare the dough. Make small rolls out of the dough & prepare puri. Put the potato mixture on the puri, & roll it back so that the mixture doesn't pop out. After making it into small rolls, again prepare paratha out of it, put it over a non-stick pan & cook until crisp. Alu ke parathe are ready & can be served hot with curd & tomato ketchup or pickles.

    Aloo ki Tikki

    Ingredients:

    • 4 cups of Potato (boiled)
    • 2 Onions (chopped)
    • 1 cup of Beans (boiled and chopped)
    • Green Chillies (Hari Mirch) (chopped - to taste)
    • 4 tbsp. Raisins (Kishmish)
    • 4 tbsp. Fresh Coriander/Cilantro Leaves (chopped)
    • 2 tsp. Garam Masala Powder
    • 2 tsp. Cumin Powder (Pisa Zeera)
    • 1 tsp. Turmeric Powder (Pisi Haldi)
    • 1 tsp. Red Chilli Powder (Pisi Lal Mirch)
    • Salt (to taste)
    • Cooking Oil (for frying tikkis)
    Directions:

    1. Mix together chopped onions, beans, green chillies and raisins.
    2. Add cumin powder, turmeric powder, coriander leaves and salt. Mix well. Filling is now ready.
    3. Mash the boiled potatoes. Add garam masala powder, red chilli powder, and salt. Mix to prepare a dough.
    4. Make small balls from dough and flatten each ball. Put one tablespoon of filling on the flattened ball. Cover ball with another potato ball and flatten it.
    5. Heat cooking oil. Fry flattened tikkis until they turn brown.
    6. Serve with plain yogurt and green chutney.

    Ingredients:
    2 Cups besan
    3/4 lb Potatoes
    2 tbsp Grated coconut
    4 Onions, chopped finely
    4 Green chillies
    4 Cloves garlic
    Sugar to taste
    Juice of one lime
    A few sprigs coriander leaves, chopped
    1 tsp Mustard seeds
    A small piece ginger
    1 tsp Turmeric powder
    1/2 tsp Red chilli powder
    1 tsp Cumin seeds
    A pinch of baking soda
    Oil for deep frying
    Water as required
    Salt to taste

    How to make Batata Vada:Cook potatoes into the Pressure cooker until soft. Peel and mash them, keep aside. Grind green chillies, garlic and ginger together to make a fine paste. Combine this paste, potato, onions, coriander leaves, sugar, lime juice and salt, mix well. Take a pan and heat a little oil and fry mustard seeds and curry leaves until the mustard crackles. Remove it from the heat and add it to the potato mixture. Take another bowl and combine besan, salt, cumin seeds, red chilli powder, baking soda, coconut, turmeric powder and little water in it, to make a thick batter. Add a tsp of hot oil to the batter. Make small balls from the potato mixture. Dip each ball in the batter and deep fry until golden brown. Serve hot batata vada with chutney or tomato sauce.

    Ingredients


    500g potatoes, boiled, peeled and diced
    1 c cooked small chopped mixed vegetables - carrots, beans, peas, cauliflower
    1/2 c chopped onions
    1/2 c ghee
    4 green chilis, slit and chopped
    1/2 inch ginger, sliced finely
    250g tomato, chopped
    1 tsp red chili powder
    1 tsp ginger garlic paste
    salt to taste
    5 tbsp butter
    1 tsp garam masala
    a bunch of fresh coriander leaves, chopped
    2 tbsp lemon juice
    lemon wedges for garnish
    4 pao or buns, halved


    Method

    Heat ghee in a pan. Reserve 3 tsp chopped onions for garnish and fry the remaining till light brown. Add green chillis, ginger and tomatoes and saute over medium heat for 2-3 minutes. Reduce heat, then add the red chilli powder, mixed vegetables and potatoes.
    With a metal spatula, simultaneously mash and stir for 5 minutes. While stirring, keep sprinkling the ginger garlic paste, dissolved in 6 tablespoons water. Add salt and two thirds of butter. Increase the heat and stir well.
    Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
    Garnish with remaining chopped onions.
    Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides. Serve with the bhaji and a lemon wedge
