    Aalo bhaja


    Ingredients




    • 4 large-sized Potatoes (cut into very thin strips)


    • 3 finely chopped Green Chillies (optional)


    • 1 tsp Black Cumin Seeds


    • 1/2 tsp Turmeric Powder


    • 1 Dry Red Chilli


    • 4 tbsp Oil


    • Salt to taste



    How to make Aloo Bhaja:

    Heat oil in a flat pan and add red chilli after breaking it in two pieces. When the chilly turns blackish red; add the cumin seeds and allow it to splutter. Now add turmeric powder, green chillies and potato strips. Fry till the potatoes on high flame for 20 seconds and then on low flame till tender. Add salt to taste and stir properly for 1 minute; put off the flame. Serve hot with freshly prepared rice and dal.

    ALU KE PARATHE

    aloo paratha - Polling 4 Cooking Competition Oct 2009


    Ingredients:-


    Boiled potatoes, wheat flour, red chilly powder, , salt to taste, finely chopped coriander leaves, chopped green chilly, oil.

    Procedure: -


    Peel the boiled potatoes, and crush them. Add red chilly powder, a little bit of aniseed, finely chopped green chilly, chopped coriander leaves, salt to taste and mix them well. Heat oil in a pan and saut the potato mixture for some while.

    Now take wheat flour, add a pinch of salt and prepare the dough. Make small rolls out of the dough & prepare puri. Put the potato mixture on the puri, & roll it back so that the mixture doesn't pop out. After making it into small rolls, again prepare paratha out of it, put it over a non-stick pan & cook until crisp. Alu ke parathe are ready & can be served hot with curd & tomato ketchup or pickles.

    Ingredients:

    • 4 cups of Potato (boiled)
    • 2 Onions (chopped)
    • 1 cup of Beans (boiled and chopped)
    • Green Chillies (Hari Mirch) (chopped - to taste)
    • 4 tbsp. Raisins (Kishmish)
    • 4 tbsp. Fresh Coriander/Cilantro Leaves (chopped)
    • 2 tsp. Garam Masala Powder
    • 2 tsp. Cumin Powder (Pisa Zeera)
    • 1 tsp. Turmeric Powder (Pisi Haldi)
    • 1 tsp. Red Chilli Powder (Pisi Lal Mirch)
    • Salt (to taste)
    • Cooking Oil (for frying tikkis)
    Directions:

    1. Mix together chopped onions, beans, green chillies and raisins.
    2. Add cumin powder, turmeric powder, coriander leaves and salt. Mix well. Filling is now ready.
    3. Mash the boiled potatoes. Add garam masala powder, red chilli powder, and salt. Mix to prepare a dough.
    4. Make small balls from dough and flatten each ball. Put one tablespoon of filling on the flattened ball. Cover ball with another potato ball and flatten it.
    5. Heat cooking oil. Fry flattened tikkis until they turn brown.
    6. Serve with plain yogurt and green chutney.

    Ingredients:
    • 2 Cups besan
    • 3/4 lb Potatoes
    • 2 tbsp Grated coconut
    • 4 Onions, chopped finely
    • 4 Green chillies
    • 4 Cloves garlic
    • Sugar to taste
    • Juice of one lime
    • A few sprigs coriander leaves, chopped
    • 1 tsp Mustard seeds
    • A small piece ginger
    • 1 tsp Turmeric powder
    • 1/2 tsp Red chilli powder
    • 1 tsp Cumin seeds
    • A pinch of baking soda
    • Oil for deep frying
    • Water as required
    • Salt to taste

    How to make Batata Vada:Cook potatoes into the Pressure cooker until soft. Peel and mash them, keep aside. Grind green chillies, garlic and ginger together to make a fine paste. Combine this paste, potato, onions, coriander leaves, sugar, lime juice and salt, mix well. Take a pan and heat a little oil and fry mustard seeds and curry leaves until the mustard crackles. Remove it from the heat and add it to the potato mixture. Take another bowl and combine besan, salt, cumin seeds, red chilli powder, baking soda, coconut, turmeric powder and little water in it, to make a thick batter. Add a tsp of hot oil to the batter. Make small balls from the potato mixture. Dip each ball in the batter and deep fry until golden brown. Serve hot batata vada with chutney or tomato sauce.

    Ingredients


    500g potatoes, boiled, peeled and diced
    1 c cooked small chopped mixed vegetables - carrots, beans, peas, cauliflower
    1/2 c chopped onions
    1/2 c ghee
    4 green chilis, slit and chopped
    1/2 inch ginger, sliced finely
    250g tomato, chopped
    1 tsp red chili powder
    1 tsp ginger garlic paste
    salt to taste
    5 tbsp butter
    1 tsp garam masala
    a bunch of fresh coriander leaves, chopped
    2 tbsp lemon juice
    lemon wedges for garnish
    4 pao or buns, halved


    Method

    Heat ghee in a pan. Reserve 3 tsp chopped onions for garnish and fry the remaining till light brown. Add green chillis, ginger and tomatoes and saute over medium heat for 2-3 minutes. Reduce heat, then add the red chilli powder, mixed vegetables and potatoes.
    With a metal spatula, simultaneously mash and stir for 5 minutes. While stirring, keep sprinkling the ginger garlic paste, dissolved in 6 tablespoons water. Add salt and two thirds of butter. Increase the heat and stir well.
    Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
    Garnish with remaining chopped onions.
    Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides. Serve with the bhaji and a lemon wedge

    Chili Potato Recipe

    Ingredients:
    • 5 Large Potatoes
    • 5 tbsp Cornflour
    • 2 tbsp Soy Sauce
    • 1 tbsp Vinegar
    • tsp Sugar
    • Salt to taste
    • Oil for frying
    • tsp Ajinomoto
    • 2 Capsicum (diced)
    • 1 Large Onion (diced)
    • 1tbsp Red Chili Powder
    • 1 tbsp Garlic (chopped)
    • 3-4 Green Chilies (slit sideways)


    How to make Chili Potato:
    •Boil the potatoes until just fork tender. Peel the potatoes and cut them into wedges. •Coat the potato wedges with cornflour and deep fry until golden brown. •Heat 2tbsp of oil in a pan rate pan. Add garlic, onions and capsicum to the oil. Stir fry for 10-15 sec. •Add soy sauce, salt, half-cup water, sugar and ajinomotto to the above. Stir it. •In a bowl, take 1tbsp cornflour and add a little water to it. Mix it well. Now, add this mixture to the above-made gravy. •Add vinegar, potatoes and green chili to the above. Mix well and cook it for another 2 minutes. •Chili Potato is ready to eat. Serve hot.

    Tandoori Aloo

    Ingredients:
    • 1 Cup small potatoes
    • 2 Garlic (crushed)
    • 2 tsp Cumin seed powder
    • 1 tbsp Red chilli powder
    • 4 Kashmiri Chillies
    • 2 Garlic flakes
    • 2 Cups water
    • Salt to taste

    How to make Tandoori Aloo: •Wash the potatoes and peel them. •Slit them half way on two sides. •Place them all around the microwave turntable. •Place a glass of water in the centre to prevent from getting wrinkled. •Place it on microwave for 10 minutes. •Grind kashmiri chillies and garlic flakes to make a paste. •Heat the oil and add paste with salt. •Mix it well and microwave it for 1 minute. •Add potatoes, cumin seed powder and red chilli powder. •Place the potato mixture in an oven at 350F. •Serve hot with rotis.

    Dahi Waly Aaloo

    Ingredients:
    1 cup curd
    500 g small potatoes (or cubed if larger)
    teaspoon methi seeds
    teaspoon Zeera ( cumin )
    teaspoon kalonji or kala zeera ( nigella )
    teaspoon saunf ( aniseed)
    1 teaspoon oil
    1 teaspoon mustard seeds
    Salt to taste
    A handful of curry leaves
    Method
    1. Hang curd in muslin to drain off moisture.
    2. Boil potatoes and peel when cool. Meanwhile, roughly pound methi, kalonji and saunf.
    3. Heat oil and add mustard. Add pounded spices; when they start to splutter, add potatoes, salt, curd and curry leaves. Stir well, cover and simmer for 15- 20 minutes. Serve with puris/ chapattiss with green chillies if liked.

    • 1 package active dry yeast
    • 1/4 cup warm water
    • 1/2 cup mashed potato flakes
    • 1/4 cup butter
    • 1 tablespoon sugar
    • 2 teaspoons salt
    • dash cayenne pepper
    • 3/4 cup boiling water
    • 3/4 cup half-and-half
    • 1 1/2 cup shredded sharp cheddar cheese
    • 1 egg
    • 3 to 3 1/4 cups all-purpose flour
    • 3 tablespoons melted butter


    Preparation:

    Combine yeast with 1/4 cup warm water; stir and set aside. In a large mixing bowl, combine potato flakes, 1/4 cup butter, sugar, salt, and cayenne pepper. Add boiling water and half-and-half. Stir in stir in shredded cheese, egg, and yeast mixture. Blend in flour to make a soft dough; cover with plastic wrap and let rise in a warm place for 1 to 1 1/2 hours.
    Grease 24 muffin cups.
    Fill each muffin cup about 2/3 full with dough; cover lightly with a clean dish cloth and let rise about 45 minutes.

    Combine melted butter with remaining 1/2 cup of shredded cheese; spoon mixture over the rolls. Bake at 375 for 15 to 20 minutes, or until nicely browned. Serve potato rolls warm.

    Ingredients:




    • 1-2 medium Potatoes (any type)
    • 1/2 Onion, sliced into strips
    • 1 tsp Garlic Minced
    • 1 Tbsp Soya Sauce/Tamari
    • Salt, to taste
    • 1 tsp Rice Wine/Vinegar
    • Dash of chilli powder/flakes
    • 1 tsp 5-spice powder



    Directions:





    1. Peel potatoes and cut into julienned strips.
    2. Soak in boiling water for 1-2 mins.
    3. Drain, rinse with cold water and pat dry.
    4. Heat oil in pan and add onions and garlic. Stir til slightly brown (about 1 min).
    5. Add potato sticks, soya sauce, salt, wine vinegar and chilli powder. Stir to coat.
    6. Sprinkle 5-spice powder and stir again for about another minute.
    7. Remove from heat and serve into a plate.

    • 4 boiled potatoes / aloo
    • 1 cup of well beaten curd / dahi
    • tbsp of ajwain /caraway, carom seeds
    • tbsp of zeera / cumin
    • Salt to taste
    • tbsp of turmeric powder
    • tbsp of red chili powder
    • 2 green chilies
    • tbsp of turmeric powder
    • tbsp of ginger minced
    • 3 diced tomatoes

    Directions

    1. Boil 4 Aloo / Potatoes and keep it aside.
    2. In a non stick pan add ajwain, jeera seeds and let them splutter and little dark not burnt.
    3. Add Ginger and green chilies minced finely.
    4. Now add turmeric powder, amchoor powder, salt, red chili powder.
    5. When they are mixed together add 3 diced in cubes tomatoes.
    6. Cover the pan for 3-5 minutes till the tomatoes are really soft and the mixture turns to red color and oil leaves at end of pan.
    7. Add aloo in it and 3 cups of water and let it cook for 5-10 minutes.
    8. Mash aloo little bit and add curd let it cook for 2-5 minutes.
    9. Serve hot with puri's.
