    Default Shahjahani Kebab

    Ingredients

    * 1/4 kg minced mutton
    * 3 tbsp split bengal gram(channa dal - soaked in water 1 hours ago)
    * 2 tbsp split besan dal powder
    * 2 tsp ginger-garlic paste
    * 50 gm ghee(clarified butter)
    * 50 gm refined oil
    * 1 tsp chilli powder
    * 1/2 tsp turmeric powder
    * 1 tsp salt-to taste
    * 3 tbsp onion paste
    * 1/2 tsp coriander powder
    * 1 tsp fresh pepper powder
    * 1 big onion - finely chopped
    * 1 tomato - finely chopped
    * 1 tsp lemon juice
    * 1/2 tsp cardamom and cinnamon stick powder
    * 1/2 tsp cumin powder
    * 1/2 tsp fennel seeds- powdered
    * 2 tbsp grated nutmeg
    * 1 tsp corn flour- pasted in 2 tsp warm water
    * few coriander and mint leaves



    Directions

    1. Mix all the ingredients, except ghee and refined oil and cook(saute) on medium heat for 15 mins till the water evaporates.Allow it to cool.
    2. After 20 mins,grind to a fine paste without adding water.Shape into round patties.
    3. Heat ghee and refined oil in a kadai and deep-fry these patties till golden-brown.
    4. Serve with tomato ketchup and lemon wedges
