1 can (14-3/4 oz) cream style golden sweet corn
1 can (8-3/4 oz) whole kernel corn, drained
1 can (14-1/2 oz) diced tomatoes with garlic & onion
1 can (15 oz) black or red kidney beans, rinsed & drained
1/2 cup chicken broth
Combine cream corn, whole kernel corn, undrained tomatoes, beans, broth and 1/2 cup of water in a medium saucepan. Bring to boil; reduce heat. Simmer, uncovered for 5 minutes.
Ladle into bowls. Sprinkle each serving with shredded cheddar cheese or chopped fresh chili peppers and garnish with fresh cilantro, if desired.
Variation: For a heartier chowder, add 1 can (8-3/4 oz) lima beans (drained) and stir in cubed & cooked chicken or turkey before simmering.
