    GOSHT CURRY

    Ingredients

    1 clove garlic, peeled
    1 (2 inch) piece fresh ginger root, peeled
    1/4 cup vegetable oil
    1 (3 inch) cinnamon stick
    1/2 teaspoon cumin seeds
    1 star anise pod
    8 kaffir lime leaves
    2 pounds mutton, cubed
    10 shallots, sliced
    2 large tomatoes, chopped
    5 tablespoons curry powder
    1/2 cup coconut milk
    salt to taste
    4 cups water
    4 large potatoes, peeled and cubed

    Directions

    Combine the garlic and ginger in a food processor. Blend into a paste and set aside.
    Heat the oil in a large skillet over medium heat. Add the cinnamon stick, cumin seeds, anise pod, and lime leaves. Add the shallots; cook and stir until starting to brown, about 5 minutes. Stir in the ginger garlic paste. Cook and stir for a few more minutes, and then stir in the mutton and tomatoes. Cover and simmer over low heat for 30 minutes.
    Stir in the curry powder, coconut milk and water and add the potato. Season with salt to taste. Cover and simmer until potato and mutton are tender, about 30 more minutes.

    Ingredients:

    • 4 Cloves
    • 1/4 cup Oil
    • Salt to taste
    • 3/4 cup Water
    • 2 tsp Garlic Paste
    • 2 tsp Ginger Paste
    • 1/2 tsp Turmeric Powder
    • 6 Black Peppercorns
    • 2-1/2'' Cinnamon Stick
    • 1 big Tomato (chopped)
    • 1 big Onion (chopped)
    • 2 tbsp Coriander Powder
    • 1 tbsp Red Chili Powder
    • 1/2 tsp Garam Masala
    • 1 tsp Cumin Powder
    • 1/2 kg Mutton (cut into small pieces)
    • 5-6 twigs Coriander Leaves (chopped)

    How to make Mutton Masala: Put cloves, cinnamon stick, mutton, black peppercorn and water in a pressure cooker and cook till mutton is tender. Heat oil in a pot and saut chopped onions in it. Add chopped tomatoes and cook till soft. Add the ginger and garlic pastes to it and mix well. Add turmeric powder, red chili powder, coriander powder, salt, and garam masala. Saut for about 2 minutes. Now put mutton mixture in it and cook over low heat till the gravy thickens. Garnish it with coriander leaves. Mutton Masala is ready to savor. Serve hot.

    Lamb cutlets recipe

    This recipe also known as Marinated Lamb Cutlets Recipe
    Ingredients:-Lamb cutlets 300x282 - Polling 4 Cooking Comp nov 2010

    250 gms Lamb Chops
    50 gms Lamb, minced
    100 gms Assorted vegetables, boil and minced
    5 gms Salt
    15 gms Pepper powder
    10 gms Fresh mint
    20 gms Thyme
    20 ml Worcestershire sauce
    1 Lemon
    Mashed potatoes and mint sauce to serve.
    Method:

    Mix minced lamb, vegetable salt, pepper, mint, Worcestershire sauce and thyme.
    Slit chop along the bone to make a pocket.
    Stuff a portion of the minced mixture into it. Marinate lamb cutlets with salt, pepper and lemon juice.
    Keep aside for three hours.
    Coat with thyme leaves and cook in frying pan on slow flame for 10 minutes.
    Arrange in a plate, serve with mint sauce, mashed potatoes and boiled vegetable.

    نمک سرخ مرچ :حسب ذائقہ
    گھی: ايک پائو
    باسی روٹي کا ٹکڑا: ايک
    کوئلہ: ايک

    ترکيب :
    ايک پائو پياز اور لہسن و ادرک باريک پيس ليں، گوشت کو دھو کر اس ميں يہ پسا ہوا پياز و ادرک لہسن، نمک، مرچ و خشک دھنيا ايک چائے کا چمچہ ڈال کر دو پيالي پاني ڈال کر پکنے ديں، جب پاني خشک ہوجائے تو گھی ڈال کر خوب اچھي طرح بھون ليں، تاکہ بو نہ رہے يعني کچا پن ختم ہوجائے اور گھی چھوڑنے لگے۔
    دہی کو پھينٹ ليں، بقايا پياز کو باريک کاٹ ليں، پودينہ کے پتے دھو کر باريک کاٹ ليں، اور ہري مرچيں بھي کرليں، پياز پودينہ اور ہری مرچيں اکھٹی ملاديں، گوشت جو بھنا ہے اس ميں دہی کی ايک تہہ لگائيں، دوسري تہہ پياز و پودينے کی، پھر دوبارہ دہی، پھر دوبارہ پياز اور پودينہ کی، اب درميان ميں يعني پياز پودينہ کي تہہ کے اوپر روٹی کا ايک گول ٹکڑا کاٹ کر رکھيں۔
    اس روٹی پر دہکتا ہوا ايک کوئلہ رکھيں، کوئلے کے اوپر تھوڑا سا گھی ڈال ديں، جب دھواں اٹھنے لگےتو فورا ديگچی کا منہ ڈھک ديں، پانچ منٹ بعد ڈھکن کھوليں، کوئلہ بمعہ روٹي کے احتياط سے اٹھائيں اور مزيد احتياط سے سالن کو کھلی ڈش ميں نکال ليں، يہ سالن بھی کھلے منہ کے ساس پين ميں پکائيں۔

    Kunna Gosht




    Ingredients

    Mutton with bone (large pieces from the leg): 1 kg
    Red chilli powder: 8 gm
    Cardamom whole: 2
    Black cardamom: 2
    Coriander leaves: 5 gm
    Crushed coriander seeds: 10 gm
    Cinnamon: 1 stick
    Zeera: 5 gm
    Bay leaf: 2
    Onion: 400 gm
    Mace: 2
    Mustard oil: 4 tbsp
    Ginger-garlic paste: 50 gm
    Curd: 150 gm
    Haldi powder: 5 gm
    Mutton stock: 2 cups
    Salt to taste



    Method




    Heat the mustard oil in a heavy bottom pan and drop the whole spices. Cook till the spices start to crackle. Add the chopped onion and fry till golden brown.
    Add the ginger-garlic paste and the mutton and cook for five to seven minutes. Then add the crushed coriander seeds, red chilli powder and the haldi powder. Cook further till the meat is half cooked.
    Now add the beaten curd and cook till the gravy thickens.
    Add the mutton stock and cover the lid and slow cook till the meat is tender. Add the shahi jeera and salt to taste.
    Serve hot and garnish with shahi jeera and chopped coriander leaves. Best when served with khamiri roti.

    1 kilogram of Beef (with bones)
    3 medium Onions (thinly sliced)
    2 tbsp. of All-Purpose Flour (Maida)
    1 small piece of Dry Ginger (Sounth)
    2 Small White Cardamoms (Choti Safaid Ilaichi)
    2 Bay Leaves (Tezz Pattay)
    1 Cinnamon Stick (Dal Cheeni)
    2 tsp. of Garam Masala Powder
    2 tbsp. of Aniseeds/Fennel Seeds (Sounf) (grounded)
    1 tsp. Red Chilli Powder (Pisi Lal Mirch) (or to taste)
    2 pinches of Nutmeg
    tsp. Turmeric Powder (Pisi Haldi)
    Salt (to taste)
    1 small piece of Black Salt (Kaala Namak)
    1 tbsp. Garlic Paste (Pisa Lehsan)
    1 tbsp. Ginger Paste (Pisi Adrak)
    cup Plain Yogurt
    cup Clarified Butter (Ghee) or Cooking Oil

    Ingredients for Garnishing

    1 medium Onion (sliced, fried to brown and dried) (or a cup of ready-fried onions)
    3 Green Chillies (Hari Mirch) (chopped)
    1 (2" piece) of Ginger Root (Adrak) (cut in strips)
    A bunch of Fresh Coriander Leaves (Hara Dhania) (chopped)
    1 Lemon
    Nullies
    Bheja

    Directions

    In a pot, heat the clarified butter or cooking oil. Once the oil gets hot add in the 3 sliced onions. Turn the stove down to medium. Fry the onions to golden brown. Remove from oil and put the onions on a paper towel to absorb any excess oil. Crush the onions.

    Add the meat and garam masala powder (whole spices), plain yogurt , ginger paste, garlic paste, salt, red chilli powder, bay leaves, cinnamon and turmeric powder, continuously fry by stirring until the oil separates.

    Add in the nutmeg, cardamoms, aniseeds and black salt. Stir, add in enough water to cover meat and cook on low heat covered for 2 to 3 hrs.

    Once the meat is cooked and tender, add in the flour and cook on low heat for about another 10 minutes.

    Garnish with coriander leaves, fried onions, green chillies ginger strips, lemon juice, nullies and bhejas.

    Serving Suggestions: Serve Hot with Chapati Roti or Nan
